Tree Hugger

My precious boy has a heart for nature. He loves the outdoors. This is him showing some love to a tree. I just can't get enough of this little guy. Good thing we're having another, since I think he's totally sick of me already. He's told me he's looking around for somewhere else to live. Somewhere where they'll back off and treat him like the big boy that he is :)

Home Sweet First Home

A good friend from Camp Lejeune called yesterday to inform me that due to all of the renovations going on, they are able to move into a home that was just newly renovated. Guess what home she's moving into? Yup, our old home! It was such a wonderful home to live in. I am so excited that a friend will be able to enjoy the home as well. We have so many fond memories there. This is a picture soon after we moved in.

I'm excited to see what it looks like now after the renovations. I heard they enclosed the carport and made it a two car garage and then added a room onto the back. Living in base housing we were very blessed to have this home. Even though it does look like a jail from the outside. Inside it is actually very bright. There is a whole wall of windows on the other side of the home that make up for the absence of windows in the front. Might I ask who in their right mind would come up with this design for a home and look at it and think, wow, what a gorgeous home! A home with no windows in the front... typical military. If you're trying to look at the positive side, it's sure is a safe haven if we were to come under enemy fire from the front. I'm sure that's what they were thinking!

A Quilt For A Princess

Normally, when I make quilts to donate I make them either for boys or make them unisex. Most of my quilting friends lean towards girl quilts since there are so many precious prints out there that lend themselves so easily for a girl, so I try to fill in the gap. I don't mind since I have such a heart for little boys. (Pretty neat that God has already blessed me with two). I could not resist when I saw the flower prints in this quilt, though. I just had to bring them together in a quilt. I had a vision and it just had to come to fruition. So, after about a year of the fabrics sitting there in a pile, they are now a quilt. I pray this quilt will warm some little girl out in the NC area.


Now, that my quilts to give away are all done (for now), I have turned my attention to Christmas and would like to try some quilting out as gifts. I've received one request for place mats, which I think is a great idea. Does anyone have any other ideas?

20 Weeks Down, 20 Weeks to Go

Yesterday marked the halfway mark of the pregnancy with Joseph. It has been a very blessed 20 weeks. We celebrated by opening one of the jars of salsa I canned this summer. We have been trying to wait as long as possible to dive into them so they would last throughout the winter. It was worth the wait. I'm so glad it turned out well.

We also had a 'Hee-Haw Hootenanny' at our church. It was a blast. There was a chili cookoff, square dancing, a fire truck ride and a wagon ride pulled by horses. Samuel absolutely loved the fire truck and the wagon rides. (Here is where I would enter some pictures of the most adorable kid in the universe, but I forgot to bring my camera. So, just imagine. It's good for ya).

Then moving back a little later in time, Saturday afternoon Andy, Samuel and Gamba went for a run. But, this time Dada got it right in dressing Samuel accordingly. We finally found our winter accessories. They were in a box labeled 'winter accessories' in our front closet, imagine that. Samuel was his typical self and was not to thrilled about his winter hat. But, I was able to snap an adorable picture of him attempting to take it off. The real hatred began when he had a winter suit put on him. So, Andy had a t-shirt and shorts on and Samuel had a winter suit on. It was comical. Look at that face!

The State of the Eckert Address

In honor of our 100th post on our blog and in what we have come to realize is blogging tradition, we are posting 100 things about ourselves. We have chosen to blog the story of how it all began up until where we are now. If it wasn't stated here, just consider it not important. And believe us, 90 of these aren't even important. So basically, we would all be better off if in the blogging world you would honor your 10th post and then we could have just blogged about 10 things about us. But, we are rule followers and don't like to cause a ruckus. So, here goes nothing...

1. The Eckerts were established on April 10, 2004.

2. That was 1,289 days ago.

3. They met in downtown Baltimore, MD.

4. On June 14, 2000.

5. At an architecture firm.

6. During their summer jobs.

7. Amy was a graphic design intern.

8. And Andy refilled printer paper.

9. Andy earned more than Amy per hour.

10. That was 2,685 days ago.

11. They had their first kiss 64 days later.

12. That was on August 16, 2000.

13. They did not know all of those numbers.

14. They used www.timeanddate.com to figure those out.

15. It was not love at first sight.

16. But Andy sure did know how to make Amy laugh.

17. And so they decided to try to see what would happen from there.

18. Andy left for UVa for his second year of college, one week later.

19. Amy stayed in Annapolis and started her first year of college, at a community college.

20. They were 3 hours apart. 148 miles to be exact.

21. The next year (2001) Amy moved to Richmond, VA to attend VCU. She majored in Graphic Design.

22. They were only 62 miles away during those years.

23. Then Andy graduated in May 2003.

24. And Became a Marine officer.

25. And moved to Quantico, VA for more training.

26. But, before then they took a break.

27. Because Andy wasn't ready to fully commit.

28. Amy was heartbroken.

29. There was no other woman who could love him as much as she did.

30. Or would be able to put up with him.

31. They complimented each other so well.

32. She knew it was not the end of their love story.

33. They spent that Summer and Fall apart.

34. And after Andy regained his senses, they got back together on November 23, 2003.

35. Then, on January 2, 2004 Andy asked Amy's parents for their permission to propose to her.

36. They said 'take her!'

37. In a very loving way, of course.

38. Andy was scheduled to deploy to Haiti and then from there head right to Iraq for 7 months.

39. They had no idea what the future held.

40. But they knew they wanted to face it as husband and wife.

41. It was a few months of chaos and many many different wedding dates, but they eventually got married.

42. Amy was still in college.

43. Andy did not deploy to Haiti.

44. But he did deploy to Iraq, June 22, 2004.

45. He got home January 31, 2005.

46. He was gone 223 days.

47. Making that 7 months and 9 long days.

48. Amy lived in their home in Camp Lejeune, NC while he was gone.

49. With the company of their precious puppies, Lutalo and Gamba.

50. And of course, BJ, the bird.

51. When he came home two brand new kayaks were waiting for him!

52. Amy named hers Sunshine.

53. It was yellow.

54. And Andy named his Red Lightning.

55. It was red.

56. Each boat has their own theme song.

57. And so began their love of kayaking.

58. They lived within walking distance of water.

59. And they used that to their full advantage.

60. Life in NC was good.

61. It was even better after they were with child.

62. Who was conceived exactly 2 years ago this week!

63. They call him the Hurricane Katrina baby.

64. Andy had just gotten home from a month long deployment aiding in the Hurricane relief efforts down south.

65. Then there was life planning for a baby.

66. That time seemed to have flown.

67. Then there was life after saying goodbye with no born baby yet.

68. That time did not fly.

69. Finally, that time arrived, July 17, 2006.

70. Samuel Andrew Eckert was born at 1:34pm.

71. He weighed 7 lbs 1.4 oz.

72. Then there was life with a baby but no husband.

73. That was a time where no woman wants to experience.

74. But, will always live to tell about it.

75. And it makes her stronger and more capable than she ever would think.

76. Then finally, 20 weeks later, they were complete.

77. Andy returned home on December 3, 2006 after being gone for 6 months.

78. Then life with Daddy, Mommy, and baby began.

79. And they have not been far apart since.

80. February 1, 2007 marked the end of Andy's active duty Marine Corps career.

81. We loaded everyone in the cars and headed to Indiana.

82. Mommy, Samuel, Gamba, Lutalo and BJ in one car, Daddy in the other.

83. Camp Lejeune was our first home together and many memories were made that were sad to leave behind.

84. We made it to Indiana after 18 hours.

85. It should have taken, oh, about 9.

86. There were a few backups from accidents along the way.

87. And snow, don't forget the snow. There was lots of snow.

88. Andy attended a log building school to see if he wanted to go down that avenue of work.

89. He loved the trade, but decided it was not worth pursing as a career.

90. For a lack of anywhere else to go and a love for the new church they found, they decided to stay put in Indiana for awhile to see where God would lead from there.

91. They then lost their precious and beloved Lutalo on April 29, 2007.

92. Not a day goes by where they don't think of him and wish he was there.

93. They moved to the honey farm exactly 2 weeks later, where they currently reside.

94. Andy is now currently working construction as a carpenter.

95. And Amy is running 'Bushu' which is Samuel's name for their homeschool.

96. Something that they are both enjoying very much.

97. She tries to get in as much quilting, gardening, baking and cooking as possible.

98. They are eagerly awaiting the arrival of their second son, Joseph Andrew, who is due to arrive around March 9, 2008.

99. Andy and Amy are 20 months apart in age, And Samuel and Joseph will be 20 months apart in age as well.

100. They could not feel more blessed as to what they've been given and are eagerly awaiting to see what God has in store next.

Pumpkin This and Pumpkin That

Every Autumn I forget how much I love it. Last year I was too wrapped up in our new bundle of joy to realize the beauty that Fall brings. This year, I have a toddler who is just as eager to get outside and enjoy the cool weather as I am.

On top of the weather comes the food! Oh yes, pumpkin this and pumpkin that! I started with the apples and am all appled-out. Now, I'm dreaming of all of the things I can do with pumpkins.

So far we've made some excellent pumpkin chocolate chip cookies, pumpkin smoothies and last night we had gingerbread waffles made with lots of pumpkin! They were yummy!

I still have a pumpkin loaf recipe that I need to try. Does anyone have any other suggestions?

And, oh, by the way. The pumpkin picture was taken by yours truly. There is ALWAYS a reason for why I take pictures like that. It's our family in pumpkin representation form! Dada is the far right. I'm next to him, then there's Samuel and Joseph the smaller pumpkins, then there's Gamba the second to the left gourd, and then BJ, the green gourd. Gamba and BJ are gourds because they are not humans. BJ is green because he's the most unlike any of the rest of us. We are all mammals, and of course, BJ, is a bird! So, there you have it. And they are all staying close to Mama because, well, she's the mother pumpkin :)

We've Got A 15 Month Old Sick Sam Pig


Today was not a fun day. It should have been, though. We should have been outside enjoying this beautiful fall weather, and celebrating Samuel's 15 month birthday, but instead Sam and Mommy were inside. Sam is sick.

Dada and Sam went on a hike when Mommy was at her prayer walk on Saturday morning and by Sunday night he was not the happiest of campers. It must have been just a bit too cold for his small system. We took a field trip to the doctors yesterday and he's got a small ear infection in each ear and has a whole bunch of phlegm in his chest. Fun stuff. So, he's on a steroid for his chest. I opted not to get the antibiotic for his ears because they weren't bad enough. He doesn't need to be on any more medication that what is totally necessary. So, we are making lots of progress on the steroids and hopefully after his congestion goes down the ears will clear up as well. Only time will tell.

Joy in the Morning

Saturday morning I was able to witness some of God's masterpieces.

There was a prayer walk for the women at our church. We spent some time at a family's home that have some gorgeous land. They have a beautiful pond where we spent our time around. I had such an overwhelming sense of God's presence. He's always 'there,' but there was just something about the freshness of the day and nature all around that reminded me of his purity.

I have experienced this before, but I tend to forget how much I truly do get out of it. Spending time with the Lord outside, and especially outside early in the morning just does something to my soul!

There were 8 or so different stations to go to on Saturday and they gave you recommendations for what to pray about at each station. Each station I found myself reflecting on a different aspect of the creator that I have to come to fall in love with deeper and deeper.

I Dream of Red

The only part about Fall that I've come to realize that I'm not too fond of is that Fall means no more fresh tomatoes... but should it?

Well, I've done a little research and have found that you can pick unripened green tomoatoes and store them!

Store tomatoes and peppers in boxes, 1 to 2 layers deep, or in plastic bags with a few holes for air circulation. If you have a cool, moderately humid room, simply place them on a shelf. Keep fruit out of direct sunlight. They may be stored in the dark. As tomatoes ripen, they naturally release ethylene gas, which stimulates ripening. To slow ripening, sort out ripened fruits from green tomatoes each week. To speed up ripening, place green or partially ripe fruits in a bag or box with a ripe tomato.
Let's hope these babies look like this in awhile!

Abolishing The Spirit of Fear

I had a side effect late in my pregnancy with Samuel that was nothing shy of painfully miserable most days. There was not much I could do about it and they said that with each subsequent pregnancy it would get worse and it would start earlier on in the pregnancy than it did the one previous.

That time in this pregnancy has come.

I was so discouraged because it came MUCH sooner than it did with Samuel and hit harder than I imagined it ever could. I was torn up inside. I couldn't imagine going through 23 more weeks of this, let another any other pregnancies. My heart was broken. Was this our answer from God as to how many children he wanted us to have? Andy and I refused to believe that God was speaking to us in that way.

On Wednesday nights, I have been attending a class at our church on prayer, taught by the wonderful Denise. As hard as it was going to be to share the details with the class, I knew I needed as many people lifting this up to the Lord asking Him for a miracle.

Last Wednesday night the Lord did a miracle in my life!

Since Wednesday I have not had once ounce of pain in my entire body. I had reluctantly claimed it was the Lord and thought deep down it also had a lot to do with my avid efforts at relieving my symptoms.

It has nothing to do with me, and everything to do with our Lord.

Denise reminded me that I cannot let the spirit of fear set in and act as though God has not taken away this pain, whether it be for a week, a month or for the entire rest of the pregnancy I need to live like I believe.

Andy also brought to my attention a story in John 6 where the disciples had just witnessed Jesus feeding 5 thousand with 5 small barley loaves and 2 small fish, and then saw Jesus walking on water. The disciples then asked Jesus, "What miraculous sign then will you give that we may see it and believe you?"

That is exactly how I was acting! I have been healed, but yet I'm still acting like what He did for me wasn't good enough. I needed some sort of 'sign' to prove to me that it was Him. Oh, what little faith I have...

I am now back to walking every day and have even started running. If God has healed me, I am going to rejoice and enjoy it, not sit back and cautiously await for the pain to return!

Tears well up in my eyes as I write this post because I know that the creator of the universe loves me more than I could ever imagine. I am so humbled by His power and in awe of his love for His children.

Fort Eckert

Building forts was my childhood passion. I would bring B.J. into them with me and we would be in there for hours. I am determined that Samuel and Joseph will like forts too. Well, it's been pretty easy to convince Samuel that they are fun. We have built many small forts, but the other day we did an entire living room makeover and gathered the whole gang for a pretzel party in our family fort. They weren't homemade pretzels, but they were still a crowd pleaser.

Homemade Soft Prezels

Andy and I have been wanting to try to make some soft pretzels lately and last night was the night. I found a great recipe and they turned out wonderful. Here's the recipe if you want to try them out. They are super easy and very yummy!


1 1/2 cup warm water
1/2 tsp salt
4 tsp yeast
2 TB brown sugar
1 TB oil
4 1/2 cup flour

Combine water, yeast, salt brown sugar, and oil, then add flour and knead like bread dough. Let rise till double then roll into strips, if desired shape into pretzels. Dip pretzels into water/soda mixture*, place on greased cookie sheet and sprinkle with coarse salt. Bake at 450, just till a little brown, about 10 minutes. Remove from pan and dip in melted butter.

*For dipping, prepare 1 cup warm water mixed with 2 tsp soda.

You can serve with mustard, cheese sauce, caramel dip, cinnamon sugar, garlic powder, parmesan cheese, or sesame seeds. Or you can even go the Amish way and wrap the dough around a hot dog before baking.

We tried one with parmesan cheese and spaghetti sauce and then another with dijon mustard. We loved both. You'll never look at the mall pretzels the same.

Mostly Samonster And A Little Mama

I thought I would share a few photos and stories today to keep you all informed on our happenings. Samuel is up to his usual boy adventures. Just last night we went on a family hike. Andy was responsible for getting Samuel ready as I was getting dinner in the oven. Both of them stood there waiting at the door, Andy with no shoes or shirt and Samuel had no shoes. At least he had a shirt on I thought! My favorite comment is "He's your kid too!" If Andy wants to make that call, then I'll let him. I'm not the only decision maker in the house. I was the one who told him to get ready, wasn't I? Well, of course Samuel walked the entire trail with no shoes on and didn't miss a beat! He loved it. A boy after his own Dada's heart. They truly are two peas in a pod! Wish I had photos. It was a cute sight to be seen.

Other Samonster updates:

He's decided he doesn't like wearing diapers. He takes his diaper off frequently! Since it's been a lot warmer in our house lately because of the warmer temperatures outside I haven't made him wear any clothes. This only makes him have easier access. So much to his shagrin he's having to wear clothes now so he doesn't have easy access to being a naked monster! He's not happy about that. If only he can figure out how to unsnap those snaps!

He's discovered foods that he can put his finger into and then put them in his mouth. We discovered this for the first time at Nana's with Cheerios. These currently are his favorite pastas since he can do this with.

I've had to make a homeschooling adjustment. NO MORE COLORING! He is obviously too young to realize the concept of not eating his crayons. It's rediculously funny to see his teeth bright blue. But, it's not funny that we've gone through a whole set of 8 crayons in less than week! I give up. Until later, it's off the list.

Samuel had his first cookie making experience. He got to lick the batter off the mixer. He of course found it to be more fun to beat the mixer on his tray. Figures. This is a kid who likes peas more that anything sweet!

And I couldn't have an update without sharing my first belly picture. I apologize for it actually being extremely hard to see the exact size of my belly. But, just take my word, it's big! This isn't even a maternity dress! WHAT?! I know, that's what I said! My mom practically bought out Old Navy for me, and 90% of the stuff wasn't even maternity. What's the deal with the enormous tops these days. If I wasn't pregnant, I would be quite angry at the latest fashion trends. But, since I am, I am well pleased. Stay tuned, I have MANY more adorable outfits to share in the months ahead. Thanks to my Mama, a fashion disater has been adverted for many months!

And I had to share that I finally finished another baby quilt. Even though this one was started oh, about a YEAR AGO. It was a group project. One person was given a certain group of fabrics and told to make a 9 inch square then it was passed to someone else and they added on 9 more inches around that square, and then to someone else, and then back to me to finish. Well, here is our attempts at making a group of random fabrics look attractive. It's fun to have games like this during our quilting guild. It spices up life. Basically it's a great way to get rid of a ton of scrapes too! I'm currently working on a baby girl quilt and I will send them off to my old church in NC so they can then donate them to babies in a local hospital around there. I sure miss my group of girls that I quilted with, but I still love quilting!
